An important part of the machine is the fitted worm wheelmounted on a bearing, which, when set in slow rotation (driven manually by a crank/wheel or by an engine), moves the pieces of meat towards the rotating a worm wheel of knives chopping meat pressed through a disc with small holes with sharp edges.
