Calisson, a specialty of Aix-en-Provence in the south of France, is a confectionery made from a thin paste of candied melon and almonds crushed together, topped with royal icing and placed on a base of unleavened bread . Regarding the calissons, the unleavened sheet must be placed on the baking sheet before pouring the preparation. It is also with these sheets, also called host paper, that you can cut out and form the unleavened decorations to be placed on a pastry. These sheets are made like cereal bread, but not leavened (not puffed up by the effect of yeast). Cut your unleavened sheets to the desired dimensions using a pair of food scissors. Ingredients: potato starch, water. May contain traces of cereals, milk, soya and derivatives. Store away from light and moisture after opening. Format: 210 x 297 mm, thickness: 0.3 mm.
